A quick, straightforward recipe to create a Cucumber Raita Dip!

  1. Using a chopping board, dice the cucumber (I leave the skin on but this is totally up to you and your preferences) and finely chop the mint.
  2. In a bowl (this could be straight into your serving bowl) mix the cucumber with the mint and yogurt, and add seasoning to taste.
  3. If you are not eating it straight away keep it in the fridge until ready to serve.

I recommend adding one at a time as some blend together better than others. What  you don’t want to do is add to many flavours as it will be more like an explosion in your mouth and you may not enjoy it!

  • The juice of 1 lemon/lime (you could add the zest as well)
  • 1 tsp cumin
  • 1/2 tsp ground corinader
  • a pinch of cayenne pepper
  • 1 tsp paprika
