The Perfect Grilled Aubergine

Having worked with kids pretty much all my life I have it drilled into me that ‘you aren’t meant to have favourites’ but let’s be honest you always do, even if it is unintentional.

Well I have found it’s the same with vegetables. OK it might not matter so much if you do have favourites but I still feel guilty on the others. But aubergine is definitely number one on my list. At least until I eat so much of it that I will need a break!

I think I love it so much because there are so many different ways to eat it, fried, steamed, grilled, roasted. You can literally cook it anyway you want.

My preferred way of cooking it is easily grilled aubergine. I like it cooked all ways but I think by grilling it the aubergine manages to hold its flavour more and you have the slightly crispier texture on the outside but still lovely and melt in the mouth like texture in the middle – best of both worlds right?!

So I have decided to share with you how I make the perfect grilled aubergine and it really is so quick, easy, straightforward AND only contains 2 ingredients!

I would normally have this recipe for a lunch but could easily add more ingredients like rice, chickpeas or spinach (etc) and make it into a dinner meal – or equally it could be a snack and you can share it between two people!

Instructions
  1. Line the grill with a sheet of foil which will stop the oil from seeping and it saves a bit of washing up! Turn the heat on the grill to its highest heat to be warming up. Using a chopping board cut the head off the aubergine and slice length ways down the middle.
  2. Put the aubergines face down on the foil (skin facing up) and using a cooking brush put 1/4 of the oil onto the aubergines and spread evenly. Put under the heat and cook for 5 minutes.
  3. Turn the aubergines over so they are now face up and cook for a further 5 minutes until the faces are golden brown.
  4. To serve season well with salt and pepper.
