Quick and Easy Cucumber Raita

As it is starting to get warmer (touch wood) I have really been craving a cool refreshing dip, that I could have with a snack or as a dipping sauce for my main meal. I think I am on to a winner with this cucumber raita!

It is so so easy to make once you have done it once you will not be able to get enough of it!

There are so many variations of a raita dip and I will offer a couple of ingredients you could add if you are feeling adventurous but really one you have the 3 basic ingredients you can add any spice you want to give it a little kick!

I have stuck with the 3 main ingredients for this recipe as when I was having a grilled aubergine with it and I wanted something simple without to much flavour as I wanted to taste the flavours of the aubergine as much as possible! A quick, straightforward recipe to create a Cucumber Raita Dip!

  1. Using a chopping board, dice the cucumber (I leave the skin on but this is totally up to you and your preferences) and finely chop the mint.
  2. In a bowl (this could be straight into your serving bowl) mix the cucumber with the mint and yogurt, and add seasoning to taste.
  3. If you are not eating it straight away keep it in the fridge until ready to serve.

OPTIONAL EXTRAS

I recommend adding one at a time as some blend together better than others. What  you don't want to do is add to many flavours as it will be more like an explosion in your mouth and you may not enjoy it!

  • The juice of 1 lemon/lime (you could add the zest as well)
  • 1 tsp cumin
  • 1/2 tsp ground corinader
  • a pinch of cayenne pepper
  • 1 tsp paprika
