Carrot and Parsnip Fries

I have decided that I am a snack person. I constantly find myself in the kitchen looking for things to eat even when I’m not hungry, I’m just bored! While I used to go to the biscuit cupboard I can’t do that anymore as the ones we buy contain wheat (and I specifically don’t buy any that don’t as I would eat them all in no time).  I needed an alternative, preferably healthy that I could go to.

I thought I better ease myself into the ‘healthy’ lifestyle bit by bit and what better way of doing it? I made myself healthy fries, that still look like fries! If I REALLY wanted to (and was desperate for something unhealthy) I could close my eyes and pretend they were actually fatty fries.

This dish can be a snack  but it could also act as a side dish to any meal. The best bit about it? I can make them pretty much whenever as we ALWAYS have carrots in. If we don’t have parsnips I either use an extra carrot sweet potato or just have a smaller snack that day.

It is such an easy dish to make and requires minimal effort (you even have time to put your feet up for a little while as they are cooking! But less of me talking, I bet you want the recipe!

Instructions
  1. Turn the oven to 180 degrees (on a fan oven). Put the olive oil on a baking tray and place in the middle of the oven to warm up.
  2. On a chopping board slice the carrot and parsnip in half - it is easier to then cut into fries but isn't a necessity - then slice into thin strips. Get the tray out of the oven and place the carrots and parsnips on the tray. Sprinkle on a good amount of salt and pepper.
  3. Flip them over and shuffle them around with a slotted turner to check they are all covered in the oil, salt and pepper (add more in necessary) then place in the oven and cook for 15 minutes.
  4. Flip them again and cook for another 15 minutes.
  5. To serve place on a plate and add extra salt and pepper (optional). Serve as a side to a meal or a snack.
Recipe Notes

NEXT TIME

Add these ingredients (just choose one or two so you don't have too many flavours) when you add the salt and pepper.

  • 1 tsp chilli flakes
  • 1 tbsp honey or agave (mix well to make sure it is evenly spread).
  • 1 tsp cumin.
  • 1 tsp paprika.
